Caramelised croissant French toast
Turn Co-op all butter croissants into an indulgent brunch dish

Ingredients

2 large Local free range eggs 4 tbsp semi-skimmed milk 1 tsp vanilla extract 1 tbsp maple syrup, plus extra to serve 1 tsp ground cinnamon 4 Co-op all butter croissants, halved lengthways 2 tbsp Co-op unsalted butter 3 tbsp Fairtrade caster sugar Fresh berries, to serve;

Method

1. Whisk the eggs, milk, vanilla, maple syrup and half the cinnamon in a shallow bowl 2. Soak the croissants in the mixture for a few seconds on each side 3. Melt half the butter in a frying pan on a medium heat until foaming, then fry 4 of the croissant halves for 2-3 mins on each side, pressing down lightly, until golden brown and crisp 4. Transfer to a baking tray and repeat for the remaining halves and butter 5. Preheat the grill to medium-high 6. Mix the caster sugar with the rest of the cinnamon and sprinkle generously over the top of the croissants 7. Grill for 1-2 mins, until the sugar melts and caramelises, then serve the croissants drizzled with the extra maple syrup and topped with fresh berries
